Here’s a Sunday morning breakfast idea that’s a little lighter but just as delicious as my fluffy pancakes… Apple pancakes!
I had a bunch of Jazz apples sitting around that I kind of thought were too old to eat raw. Actually this turned out not to be true, but there’s no reason to spoil a great story!
I have been toying with ideas about what to do with them. One thought was that I could make a carrot cake recipe but substitute grated apples for grated carrots… That might still turn out to be a really good idea, but will have to wait until I have more apples!
Instead, Sunday morning dawned bright and beautiful with incredibly warm weather for a late September day in Melbourne, and my thoughts turned naturally to breakfast. I played tennis yesterday for a couple of very intense hours, and I think still needed some carb loading, so… Pancakes. Apple Pancakes.
I really love my fluffy pancake recipe and have made them both plain and with blueberries. This morning I was thinking while I lay in bed about chocolate chips, but when I went downstairs the apples beckoned me.
Grated apple pancakes! They could be really yummy!
I had three apples, so I grated them up and my fabulous Magimix food processor which frankly I do not know how I lived without. Then I wondered about what pancake mixture to use. But you know, if it’s not broken then don’t try and fix it… I made us a half quantity of my fluffy pancake recipe and stirred in the three grated apples. A pinch of cinnamon, and I was ready for frying.
A couple of minutes on each side (so that bubbles appear on the first side before you flip the pancakes) yields golden brown, if slightly ugly breakfast treats. But slosh on the maple syrup, and dig in, because these babies are delicious.
Fluffy Apple Pancakes
Makes 8
1 cup flour
2 tbsp sugar
1/2 tsp salt
11 ml baking powder (2 tsp plus a big pinch)
2 eggs
1/2 cup milk
2 tbsp butter, melted, cooled
1/2 tsp good quality vanilla essence
pinch cinnamon
3 crisp apples, grated
Combine dry ingredients in a large bowl, mix to combine, make a well in the centre.
Add combined wet ingredients, and stir with a wire whisk until smooth. Stir in apples.
Heat a cast iron pan and grease by swirling a 1-2tbsp lump of butter over the surface, removing any butter that’s not melted. Reduce heat to medium.
Drop mixture by 1/4 to 1/3 cupfuls into pan, allowing them to spread naturally (you can assist with rounding the pancake a little with the blade of a knife if you like).
Cook pancakes in first side until bubbles form in the raw surface; turn with a spatula.
They are super good… I’m thinking they would be fab with some lemony marscapone or some vanilla bean ice cream too!
