Fireball Hot Chocolate Cupcakes – A Cupcake a Day in May

Day 16… Today I have to admit was a bit of a cake wreck day! Not that these Fireball Hot Chocolate Cupcakes are wrecks….

But things definitely did not go as planned today. After a high like yesterday’s Caramel Apple Cupcakes, you might expect a little false start. I got two.

First, the initial fireball cupcake mixture I made kinda didn’t get any flour put in it. That looks really weird when it’s baked… Kind of like a strange custard. No photos!

Then, I had planned to make a beetroot red velvet cupcake today. I’ve moaned about beetroot red velvet before in my red velvet blog. I have more reason to moan today. Making beetroot stay red in cake is really not that simple. It took four or five tries to get it right and someone didn’t write the technique down. So my attempt today tasted lovely… But was caramel brown. Fail. I only had one beetroot so a second try would have meant another shopping trip. So I made Fireball Hot Chocolate Cupcakes instead.

These were a late addition to the cupcake a day in May menu, probably inspired by the cold weather in Melbourne… Totally hot chocolate weather, and as my skiing trip to Canada has taught me (courtesy of my wonderful friend Donna) the Canadian cinnamon Whisky known as Fireball is an amazing addition to hot chocolate! I admit I bought my Fireball in Canada, but I am reliably advised that it is becoming very trendy downunder, so you should be able to but it here in Australia soon enough! You could use regular whiskey and a pinch of cinnamon as a substitute.

Let me break this down for you.

Fireball chocolate cupcake.

Cinnamon, roasted marshmallow, fireball butter roux frosting.

Roasted marshmallows.

Chocolate.

The only thing missing – the thing I couldn’t make because I don’t have the right moulds- is a Fireball whisky filled chocolate on the top. I’m sorry on two counts… For you, because they would have looked very cool. And for me, because I didn’t get to eat one where my teeth broke into the liquor chocolate when I bit into the cupcake. Life is so unfair. Maybe another day. And then I console myself, nobody was going to make chocolates to go on their cupcakes anyway. You can come order one when I finally open a cake shop!

Makes 12

ingredients

125g unsalted butter
1 cup sugar
2 eggs
1 1/2 cups flour
1/2 tsp baking soda
1/4 tsp baking powder
pinch salt
1/3 cup cocoa
1/3 cup milk
2 tbsp Fireball
1 tsp vanilla
pinch salt

mixing

Line a 12 hole muffin tin with cupcake cases, spray with non stick spray.

Beat the butter and sugar together until creamy. Beat in eggs, one at a time.  Sift flour, cocoa, baking soda, baking powder and salt over mixture and add milk, beat until smooth. Add Fireball and vanilla, beat until creamy. Spoon into cupcake cases, bake at 180 degrees Celsius for 25 minutes. Let cool on a wire rack.

When cold, frost with the frosting. I used a 8mm round nozzle. The frosting mixture makes a very generous swirl! Decorate with roasted marshmallows, sprinkle with cinnamon and drizzle with chocolate.

ingredients

1 quantity butter roux frosting, without flavouring
1/2 tsp cinnamon
1/4 cup Fireball
2 1/2 cups mini marshmallows

70g melted dark chocolate, to decorate
cinnamon powder, to decorate

mixing

Roast the marshmallows for 30 seconds or so under a very hot grill until they just start to brown. Let cool.

Make the butter roux. Add the cinnamon and Fireball and beat on low speed until combined. Add 2 cups of the roasted marshmallows to the frosting (reserving half a cup to decorate). Beat the marshmallows into the frosting on high speed until the frosting is quite smooth (there will still be toasty bits in there).
