This is how people react when they see my Cookie Monster Cupcakes. Making them again seems an appropriate way to end the madness of Cupcake a Day May.
It’s the third time I’ve made Cookie Monster Cupcakes, though the first where I have been bothered to make my own cookies. They are my Ultimate Ulitmate Chocolate Chip Cookies, and if you haven’t made them yet, it’s time you did!
If you are what you eat, the Cookie Monster must be chocolate chip, so the cupcakes are chocolate chip too. Vanilla flavoured, blinging blue butter roux frosting makes Cookie’s fur, and pools of white and dark chocolate make his googly eyes. I’ve done this from scratch but you can cheat by just putting blobs of dark chocolate onto some white chocolate buttons if you like. Just remember, the secret to Cookie’s eyes is first, off-centre pupils, and second, pupils looking in different directions.
Cookie Monster Cupcakes
Chocolate Chip Cupcakes
ingredients
115g butter, softened
115g sugar
2 eggs
115g self raising flour
1 tsp vanilla
65g chocolate chips
mixing
Butter Roux Frosting
ingredients
2 tbsp flour
2/3 cup caster sugar
165g unsalted butter, softened
mixing
Cool to room temperature – this is important, if the flour mixture is too hot the resulting frosting will be soupy! If this happens, chill the mixture and beat again.
Cream the butter and sugar until light and fluffy. With the mixer still running, add the flour mixture, a tablespoon at a time, beating until all incorporated. Add the vanilla.
Googly eyes
35g white chocolate (Melts are fine), melted
15g dark chocolate (Melts are fine), melted
Load the melted white chocolate into a small ziplock bag, squeeze the air out, and take a tiny snip off the corner of the bag. Pipe 26 -28 2cm rounds of chocolate onto a sheet of baking paper (you only need 24 but it’s nice to have options!). Let the rounds set at room temperature.
Load the melted dark chocolate into another small ziplock bag, squeeze the air out, and take a tiny snip off of the corner of the bag. Pipe dots off-centre onto each of the white chocolate rounds. Let everything set at room temperature.
Chocolate Chip Cookies
Make a 1/2 batch of my Ultimate Ulitmate Chocolate Chip Cookie recipe (you need 12 4cm diameter cookies, eat the rest!), or use good quality commercial chocolate chip cookies.
